I always like odd time signatures in songs, like 5/4, 9/8, etc.

I love it! I think it would really really awesome if there was a more complicated melody in sheets 1 and 4, like making the strats more than just quarter notes. That’s my only criticism!
This isn’t really an odd time signature song. It’s phrasing is 11 measures. 11/8 is a really really really odd time signature.

3/7 doesn’t exist, you’d probably use 3/8 instead.
Technically 3/7 could exist, it’d be three seventh notes per measure, so as a percussionist I think of it as the first three notes of a seven stroke roll (done slowly so the song could be played) per measure. 11/7 would be more feasible for seventh notes.
